BBQ Turkey Meatloaf

This meat loaf may not be the most attractive dish, but it is hands down one of my favorites! I like to use the leanest organic ground turkey I can find. The carrots in this recipe serve as my “secret” ingredient and keep the loaf super moist.

When choosing a bbq sauce for this recipe, trust your pallet and go with a favorite. If you love the sauce, you will love the loaf! I personally prefer a sweet and smokey bbq sauce for this recipe.

Lastly, I highly recommend serving this dish with my potato + cauliflower mash and a side of roasted broccoli. I hope you enjoy this meal as much as I do!

ingredients:

2 lbs organic ground turkey

2 tbs olive oil

1 onion, diced

1 red bell pepper, diced

2 large carrots, diced

2 garlic cloves, diced

1 cup panko bread crumbs

2 eggs

1 tbs worcestershire sauce

3 tbs coconut aminos (can be substituted with tamari or low sodium soy sauce)

2 cups bbq sauce (reserve 1 cup for topping)

salt & pepper

directions:

Preheat oven to 350°

In a saucepan, combine olive oil and carrots over medium heat. Add diced onion and red bell pepper. Season with salt and pepper. Cook until carrots and bell pepper become soft and onions are translucent. Lastly, add garlic and sauté for an additional minute or until garlic is cooked.

Remove from heat and set aside to cool.

In a small mixing bowl, combine egg, worcestershire sauce, coconut aminos and 1 cup of the bbq sauce. Set mixture aside.

In a large mixing bowl, combine ground turkey, panko, bbq sauce mixture and cooled veggie mixture. Your hands are the best tool for this step and ensure your ingredients are evenly distributed throughout the ground turkey.

Transfer meat mixture to a greased 9 x 13 baking dish. Use the back of a spatula to evenly distribute the meat in the baking dish. Top the meat with the remaining 1 cup bbq sauce.

Bake for approximately 45-60 minutes, or until turkey is cooked through and bbq is bubbling throughout and caramelized along the edges.
