Honey + Whipped Ricotta Crostini
New Year’s Eve is just around the corner! I love this holiday primarily for the following two reasons:
Champagne - NYE means there is almost always a guaranteed abundance of champagne, prosecco, cava (you pick your poison) flowing!
H’ordeuvres - I love them all! I am a snacker by nature and anytime I can make a meal out of finger foods, I’m down!
That being said, if you are still looking for a simple appetizer, look no further! These crostini couldn’t be any easier to assemble and they also happen to be visually stunning. As an added bonus, they are totally customizable! I’ve dressed mine with fresh blackberries, but the world is truly your oyster. I posted this fig + pistachio combination a few months back. Roasted grapes, strawberries + fresh basil, hazelnuts…all great options.
I like to assemble these just prior to serving to avoid soggy bread. Short on time? How about a crostini bar? Let your guests create their own flavor combinations themselves!
ingredients:
1 french baguette, sliced into 1/4 inch thick slices
2 tbs extra virgin olive oil
1 container whipped ricotta
1/4 cup honey (this white gold raw honey is my favorite)
*optional - blackberries for topping
directions:
Preheat oven to 350°
Arrange baguette slices on a baking sheet. Lightly brush the top of each slice with olive oil.
Bake for 15-20 minutes or until the tops are lightly toasted and golden brown.
Remove from oven and cool slightly. Spread fresh ricotta over each slice and drizzle with your favorite honey. Serve immediately.
