Roasted Cherry Tomato + Ricotta + Garlic Naan Flatbread

This easy flatbread is giving me all the feels! I’ve topped garlicky naan bread with roasted cherry tomatoes, fire roasted corn, fresh ricotta and basil. Lemon zest provides a pop of freshness perfect for spring! I highly suggest you make these flatbreads as soon as possible and don’t forget to pour a large glass of rosé while you’re at it!

ingredients:

4 pieces of naan bread

3 cups cherry tomatoes (I used an assorted variety of red and yellow)

1 large clove of garlic, crushed

3 tbs olive oil (reserve 1 tbs for drizzling over the cherry tomatoes prior to roasting)

1/2 tsp kosher salt

1/8 tsp ground black pepper

1/2 cup fresh ricotta

8 basil leaves, sliced thin

1 tsp lemon zest

1/2 cup fresh or frozen fire roasted corn

1/2 cup parmesan shavings

directions:

Preheat oven to 400°

Place cherry tomatoes on a sheet pan and drizzle with 1 tbs olive oil. Gently shake the pan until all tomatoes are lightly coated. Sprinkle tomatoes with kosher salt and ground black pepper. Place sheet pan in the oven and roast for approximately 15-20 minutes, or until tomatoes are blistered and soft.

Remove sheet pan from oven and increase oven temperature to 425°

Place 4 pieces of naan bread on a baking stone or baking sheet.

In a small bowl, combine crushed garlic with 2 tbs olive oil and set aside. Generously brush each piece of naan with the garlic and olive oil mixture.

To each naan bread add ricotta, lemon zest, roasted cherry tomatoes and fire roasted corn. Top with parmesan shavings and an additional light drizzle of the remaining garlic and olive oil mixture.

Place in the oven and bake for 10-15 minutes, or until parmesan cheese has melted and naan bread has crisped up on the bottom and edges. Carefully remove from the oven and top each naan flatbread with fresh basil. Using a pizza cutter, slice into individual size pieces and enjoy immediately!

recipe notes:

Serves 4 (1 naan flatbread per serving). This recipe turns out best with fresh ricotta as opposed to the pre-packaged variety that can sometimes have a gritty texture. If you can’t find fresh ricotta, try fresh mozzarella or burrata cheese!
