Instant Pot Coconut + Mango + Chia Steel Cut Oats

ingredients:

2 cups steel cut oats

4 1/2 cups water

1/2 cup coconut milk (I’ve been loving this Toasted Coconut Almondmilk combination from Califia Farms)

1/2 tbs pure maple syrup

1/2 cup diced fresh mango

1/2 tsp chia seeds for topping

1 pinch of unsweetened shredded coconut for topping

directions:

Add steel cut oats, water and diced mango to your instant pot. Give the mixture a good stir and secure lid in place.

Cook on high pressure for 5 minutes and then allow the pressure to naturally release (this takes approximately 10 minutes). Once all pressure has been naturally removed from the instant pot, open the lid and give the mixture another good stir.

For meal prep:

Cool slightly and transfer oats to a large container or individual portioned containers. Oats will last up to a week covered in the refrigerator. Prepare toppings and place in individual bags or containers.

When ready to eat:

Pour coconutmilk over the individual portioned chilled oats. Heat in the microwave for 1-2 minutes, or until the oats are heated through. Stir and top with maple syrup, unsweetened shredded coconut and chia seeds. I also like to top mine with some additional fresh diced mango!
