Hydrating Pitaya Smoothie Bowl

If it’s true we eat with our eyes…I will be eating this nourishing pitaya bowl every.single.morning! Honestly, I had so much fun assembling this easy pitaya (dragonfruit) bowl. The smoothie base is created by simply combining pitaya frozen fruit smoothie packs with coconut water. If you don’t like coconut water, any milk alternative can be easily substitued. If you’ve never had pitaya, you may be surprised to find out it doesn’t have a strong flavor despite it’s vivid pink color. The addition of coconut water provides not only hydration, but also a subtle sweetness. This combination also makes the perfect neutral smoothie base for your favorite toppings! I chose to top my bowl with blackberries, blueberries, kiwi, unsweetened coconut flakes, grain-free granola, chia seeds and hemp seeds.

ingredients:

2 - PitayaPlus Organic Dragon Fruit Super Fruit Smoothie packs

1/2 to 3/4 cups coconut water (this brand is my absolute favorite)

*optional toppings: blackberries, blueberries, kiwi, unsweetened shredded coconut, granola, hemp seeds & chia seeds

directions:

Blend 2 pitaya smoothie packs and coconut water on high speed until smooth. Pour into a bowl and top with your your favorite toppings! Doesn’t get much easier than that!
