Grain-Free Waffle Breakfast Sandwich

There are few things I love more than a good breakfast sandwich in the morning! This one has it all! It’s sweet, savory and slightly smokey. These waffle breakfast sandwiches comes together super quickly with the help of a boxed waffle mix. I typically don’t like to use boxed pancake & waffle mixes, but Simple Mills managed to change my mind with their grain-free almond flour based mix. This mix yields super light and slightly crispy edged grain-free waffles that pair perfectly with bacon, egg, cheese and maple syrup!

ingredients:

1 box Simple Mills Pancake & Waffle Mix , prepared as directed on the box instructions (for the mix you will need eggs, coconut oil and water)

eggs (1 egg per sandwich prepared to your liking)

1 tbs butter or coconut oil

sliced white cheddar cheese (1 slice per sandwich)

bacon (1 slice per sandwich)

pure maple syrup for drizzling

salt & pepper

directions:

Sandwich preparation:

Prepare waffle mix as directed on the box. This will require eggs, coconut oil and water. The amount will be determined by the amount of waffles you wish to cook. I typically make the whole box and save leftovers in the refrigerator for breakfast throughout the week!

While waffles are cooking, fry bacon in a skillet or cook in the microwave to desired crispiness.

As bacon and waffles are finishing up, add 1 tbs butter or coconut oil to a nonstick skillet and cook eggs. I personally like mine over medium with a tad of runny yolk. Lightly season each egg with salt and pepper.

Sandwich assembly:

Cut a waffle in half. Layer first half with cheese slice, egg, bacon and remaining half of waffle. Drizzle each sandwich with maple syrup and enjoy!

recipe notes:

Simple Mills provides a variety of ingredient measurements on the back of the waffle mix to be used depending on how many waffles you want to make. I typically make the entire box and store leftover waffles in the refrigerator to be eaten throughout the remainder of the week. They reheat really well in the toaster!
