Maple Pecan + Caramelized Banana Sweet Potato

How amazing does this breakfast sweet potato look?! Lucky for us, the recipe is really simple! I baked a sweet potato until soft and fluffy and then topped it with maple cinnamon caramelized bananas, vanilla greek yogurt and Within/Without Maple Pecan Granola. I love this specific granola because it’s grain-free, low sugar and it has an amazing maple flavor.

Now get in the kitchen as soon as possible and make one of these hot little gems for yourself!

ingredients:

1 sweet potato

1 banana, peeled and sliced

1 tsp coconut oil

1 tbs pure maple syrup

1/8 tsp ground cinnamon

1/2 cup yogurt

1 heaping handful of Within/Without Maple Pecan Chewy Granola

directions:

Preheat oven to 400°

Rinse and pat sweet potato dry. Using a fork, poke 4 sets of holes on all four sides of the sweet potato to vent. Place sweet potato on a foil lined baking sheet and place in the oven. Bake for approximately 45 minutes, or until a fork can be easily inserted through the potato.

Remove sweet potato from oven and set aside.

In a sauté pan over medium heat, add coconut oil. Once melted, add banana slices and sauté for approximately 1 minute. Add cinnamon and maple syrup to the pan and continue to sauté until maple syrup thickens and bananas caramelize. Remove from heat.

Cut open the sweet potato and slightly mash the inside using a fork. To the sweet potato add yogurt, bananas and top with Maple Pecan granola.
