Fig + Honey + Whipped Ricotta Crostini | Blush & Thyme

There are few things I love more than a crusty french baguette. Add fresh whipped ricotta + honey and it’s game over for me! The ricotta is key to knocking this recipe out of the park. You will want to use fresh ricotta as opposed to a standard packaged variety (these tend to be a bit gelatinous and grainy). As if this combo wasn’t amazing enough, each crostini is topped with crushed pistachios and fresh ripe figs.

ingredients:

1 french baguette, sliced into 1/4 inch thick slices

olive oil

1 container fresh ricotta

fresh figs, sliced lengthwise in half

pistachios, lightly crushed

honey

directions:

Preheat oven to 350°

Arrange baguette slices on a baking sheet. Lightly brush the top of each slice with olive oil.

Bake for 15-20 minutes or until tops are lightly toasted and golden brown.

Spread fresh ricotta over each slice. Lightly sprinkle with crushed pistachios and top with half a fig.

Drizzle with your favorite honey and devour immediately!
