Eggnog lovers, this one is for you! This simple recipe packs true holiday flavor and comes together in just minutes.

My husband can’t get enough eggnog this time of year. In an effort to maximize his holiday intake (because who doesn’t need nog for breakfast during the holiday season?!) I threw together this super simple overnight oats recipe. For those of you that haven’t jumped on the overnight oats wagon yet, they are a chilled, ultra creamy and chewy version of classic oatmeal. All ingredients are combined in an airtight container in the evening and left in the refrigerator to set overnight. Voila! The next morning breakfast is ready.

For caloric purposes, I prefer to use a dairy free nog alternative in this recipe. This Califia Farms Holiday Nog is currently my favorite.

ingredients:

1/2 cup rolled oats

1/2 cup dairy free holiday nog (I like using Califia Farms Holiday Nog) or classic eggnog

1/4 cup plain nonfat greek yogurt

1 tsp chia seeds

1 tsp raw shelled hemp seeds

*optional: ground nutmeg & cinnamon for sprinkling on top prior to serving


directions:

In a small container with a lid, combine all ingredients and mix until combined. Cover and chill in the refrigerator overnight. The next morning ENJOY! I like to lightly sprinkle mine with some ground nutmeg before digging in.

recipe notes:

This recipe makes 1 serving. I suggest eating these overnight oats no later than the morning after prep. I’ve tried them on the second morning and the flavor and texture just isn’t the same. They turn into more of a mush.
